Air Fried Okra tastes nothing like the fried version I had in New Orleans
Got back from a weekend trip last month and tried to recreate the okra from that little spot in the French Quarter. Mine came out crisp but kind of hollow and dry, no crunch on the inside. Anyone figure out a batter that keeps it juicy, or should I just stick to the oven?

Ugh, that's such a letdown when you finally get home and the magic just doesn't happen again. I mean, that New Orleans version probably sits in a vat of oil and gets that greasy, steam-baked texture that air just can't copy. The hollow dryness is real, I've been through it with air fried zucchini too, it's like all the moisture just escapes. Maybe try a cornmeal and buttermilk soak, then give it a quick spray of oil before you air fry, but honestly the oven might get you closer if you're patient. Still, I feel your pain, nothing beats that original crunch from a real fryer.
