Am I the only one who air fries veggies from our community garden?
Our neighborhood just had a big garden share event, and I ended up with tons of fresh bell peppers and eggplant. I chopped them into strips and tossed them in the air fryer with a little salt and garlic powder. They got super crispy without needing much oil, and my kids actually ate them all. Now I'm thinking of trying other garden veggies like green beans or carrots. Has anyone else cooked with locally grown stuff in their air fryer? I need more ideas for all this produce.

Air fryers are just fancy dehydrators for your garden guilt. I crank mine up for everything from beet slices to kale. Your kids ate eggplant? Mine still think it's purple poison.

Okay "purple poison" is too real. My kids used to run from anything that wasn't beige. The trick that finally got them to try eggplant was cutting it super thin, like almost see through, and air frying it with a tiny bit of oil and garlic powder until it was crispy like a chip. They still won't touch it mushy, but they'll eat a whole plate of the crispy slices. It took a few tries to get the timing right so they weren't chewy.
