Burned through 3 bags of frozen fries before I got it right
I kept dumping frozen fries straight in the basket and wondering why they came out soggy. Then my neighbor yelled over the fence that you gotta soak 'em in cold water for 20 minutes first and pat them bone dry. Has anyone else had that lightbulb moment with a basic ingredient?

@evan_stone totally nailed it with the overcrowding thing, that was my other huge mistake. I'd cram as many fries in the basket as possible thinking I was saving time, but they just turned into a sad, limp pile. Now I do small batches and give them space, and the difference is night and day. The soaking trick plus not crowding means I actually get that golden crunch on the outside and fluffy inside. Feels like a whole new world of fry possibilities opened up.

Man that's a rough way to learn but hey we've all been there with something in the kitchen... I did the same thing with onion rings for years until my grandma showed me the soaking trick too. The cold water thing seems like dumb extra work but it really does pull out all that extra starch that makes things gluey. Also learned the hard way that overcrowding the basket is a huge mistake, everything just steams instead of crisping up. Feels good to finally get that perfect crunch though, makes the wasted bags worth it kinda.
