Hot take: I stopped preheating my air fryer after a total fail at a potluck

Last month I brought wings to my friend Sarah's party in Austin and they came out dry as dust because I preheated like every recipe says. Turns out preheating for 5 minutes with nothing inside just makes the coil blast everything too fast on smaller batches. I did another batch without preheating and they were actually juicier and crispier in the same 20 minutes. Has anyone else ditched preheating and gotten better results or am I just lucky?

My buddy Kevin ruined an entire tray of tempura shrimp the same way last Super Bowl, so now he just tosses stuff straight in cold and adds a couple extra minutes instead.

Yeah @miles277, I do almost the same thing now with my egg rolls. Found out the hard way that frozen stuff gets a weird soggy crunch if you thaw it first. Just bump the time up by like 3 or 4 minutes and they come out way better.
