He said it just dries everything out, and honestly, I got defensive. But then I tried his method of spraying chicken wings with a 50/50 mix of water and oil before cooking, and they came out way juicier. Who else has a trick that actually works against the 'dry out' problem?

The mayo trick is interesting but does it leave any weird taste on things like fish or veggies? I've been doing a dry brine for years on chicken thighs and it works okay but I'm always looking for something better for leaner cuts like pork chops. The brine time is key though right - too long and you end up with salty weird meat instead of juicy. How long do you usually let the mayo sit on the protein before cooking?

A friend of mine was ready to give up on her air fryer for chicken breasts until she started brining them for just twenty minutes in salty water. She pats them dry, gives them a light coat of mayo instead of oil, and cooks them a few minutes less than the recipe says. They come out so tender now she uses it all the time. It really changed her mind about what that appliance could do.
