Tried breading chicken with panko instead of flour mix and it all slid off in the basket last night

The panko just wouldn't stick even after egg wash, so I ended up with naked tenders that were actually pretty good, anyone else have a breading fail turn into a happy accident?

Oh man @alex524 you're not wrong at all. I literally did the same thing one time when I was craving fried chicken but trying to keep it low carb. I ended up crushing up pork rinds and mixing them with parmesan and it actually worked pretty well. The texture wasn't exactly the same as real breading but it was close enough that I made it like three nights in a row. Honestly that's kind of the whole trick with keto cooking, just finding what substitutes work for you and rolling with it.
