I thought meal prep was a waste of time until I actually tried it for 3 weeks
For years I rolled my eyes at those Instagram meal prep posts with the little plastic containers all lined up. I figured it was just for fitness influencers or people with too much time on their hands. But after my daughter started soccer practice three nights a week in Portland, I had no time to cook dinner every night and we were eating fast food way too much. So I gave it a shot with just Sunday afternoons for 3 weeks straight. I made a big batch of chicken thighs, roasted broccoli, and some quinoa. It took about two hours total and saved me probably 10 hours during the week. Now I'm not saying I'm a convert to the fancy matching containers or anything, but having food ready to grab when I walk in the door at 7 PM changed everything. Has anyone else found a specific recipe that holds up well for a whole week without getting gross?

Hold on, isn't spending two hours every Sunday just replacing the time you saved during the week? I'd rather just cook a quick meal in 20 minutes each night than lose a whole chunk of my weekend standing over a stove. The food is never as good by Friday either, at least not in my experience (we tried it once and threw half of it out).

Ever tried making a big pot of chili on Sunday, it actually gets better by Wednesday.
