TIL a barista in Portland taught me that water temperature matters way more than bean origin for flavor

She pulled out a thermometer, showed me my usual order was brewing at 205°F instead of 195°F, and the difference in taste was honestly night and day - has anyone else had someone point out a tiny detail that totally changed how you do something?

Nah, good beans should taste good no matter the temp.

My buddy Mike swore by this cheap drip machine for years until someone pointed out his water was coming out at boiling. He switched to a temp-controlled kettle and now he won't shut up about how much better his morning coffee is.
