Question about a confusing social rule that took me years to figure out

I never understood why people say 'we should get lunch sometime' when they don't actually plan to, and it took me about 15 years to realize it's just a polite way to end a conversation. I kept trying to follow up to schedule it, which led to a lot of awkwardness and confusion. Has anyone else had a similar experience with a specific social phrase that just didn't make sense?

My buddy actually tried to schedule one of those "we should get lunch" things for months.

That reminds me of a group project in college that never got off the ground. We kept trying to pick a meeting time for like a whole semester. Honestly some things are just doomed from the start lol.
