I finally asked a customer at my Saturday market stall why she always buys two of my rosemary focaccia loaves.

She leaned in and whispered, 'One for tonight, and one to freeze because my husband in Cincinnati says it's the only thing that tastes like home,' which honestly made me tear up a little behind my display case.

That's a really sweet story, but I have to ask about the logistics. Doesn't the texture of the focaccia change a lot after being frozen and thawed? It seems like it would get soggy. Maybe she has a special way to warm it up that keeps it good. What's her secret for making it still taste like home after a trip from the freezer?
