My old boss swore I was overmixing my muffin batter, and danged if she wasn't right
Back when I worked at a small bakery in Boise, my boss Darlene kept nagging me about how long I stirred the blueberry muffin batter. I figured she was just fussing, so I kept going until it looked smooth, about a minute past what she said. The muffins came out tough and tunneled every single time, and I blamed the oven for two months. Then one slow morning I cut my stirring down to just ten folds and they finally came out tall and fluffy. Does anyone else have an old boss or coworker whose nagging turned out to be dead on?
Two months blaming the oven is wild! I can't believe you went that long without trying the shorter stir, that takes some serious stubbornness. Darlene must have been losing her mind watching you whip that batter to death every morning. It's funny how the people who bug us most at work usually end up being right about stuff like this. Muffin batter is sneaky too, because it looks all lumpy and wrong when you stop early, but that's exactly what makes them rise up nice and tall.
Stubbornness is a bit harsh, the oven really was running hot so that part wasn't in my head. Darlene being right doesn't mean she wasn't also annoying about it though. Lumpy batter still freaks me out a little but you're right that it bakes up way better.
