That new sourdough starter method failed bad

I tried that no-discard starter method I saw on Instagram, just kept feeding the same jar without tossing any. After 5 days my kitchen smelled like a barn and the starter turned gray on top. Anyone else have this go sideways on them?

Oh man, I feel this in my soul. I tried that same Instagram method and my starter was basically science experiment gone wrong. By day three it was giving off fumes that could clear a room at a party. Ended up tossing the whole jar in the trash and apologizing to my apartment building for the smell. Guess I'll stick to the discard method from now on, at least my kitchen won't smell like a barn.

Wait, did you guys actually try to do the whole "no discard" method where you just keep feeding the same jar without ever throwing any out? Because that's literally asking for a biohazard situation in your kitchen. I tried it once and my apartment smelled like a sweaty gym mixed with rotten fruit for a week straight. The discard method is the way to go, it keeps the starter happy without turning your whole place into a science experiment that's about to get you evicted. Honestly, just toss that extra stuff in the trash or compost bin and save yourself the drama.
