Warning: my stand mixer's dough hook just snapped on a third batch of sourdough

I switched to hand kneading for 10 minutes and the gluten development was visibly better, plus I didn't overheat the dough. Does anyone have a mixer brand they actually trust for heavy doughs?

Ugh, that's the worst sound in the kitchen, isn't it? That sudden crack and then everything just stops. I've been there with a snapped paddle attachment on cookie dough, which felt embarrassing. Hand kneading is a workout, but you're right, you really can feel the difference in the dough. My old KitchenAid pro finally gave up after years of bagel dough, so I'm actually looking for a replacement too.
