I was dead wrong about silpat baking mats for years

Thought silicone baking mats were a waste of money compared to parchment paper. Then my cookies kept spreading weird on a new sheet pan last month and a friend made me try her Silpat. The difference in even browning was obvious right away. Has anyone else had that moment where a tool you dismissed completely changed your results?

Started testing my Silpat by doing side by side batches of chocolate chip cookies. Parchment paper gave me burnt edges and raw middles every time, while the silicone mat gave me perfectly flat, evenly golden cookies across the whole batch. The heat just spreads way better on the silicone, so you don't get those random hot spots that mess up your bake. Have you tried using yours for things like roasted veggies yet?

Nah haven't tried veggies yet but now I gotta. I hate when parchment gives you that one burned corner and everything else is still raw. The silicone just evens everything out. My oven's got a hot spot in the back left that always screws up a batch of roasted potatoes. Maybe the mat would fix that.
