Just tried to make a mirror glaze for a cake and it went so wrong...
I followed a recipe that said to mix gelatin, white chocolate, and condensed milk. The video made it look so easy. But when I poured it over my chilled cake, it just slid right off in one thick sheet... like a weird rubber blanket. I think my cake wasn't cold enough, maybe? Has anyone else had a mirror glaze just... give up completely?

A rubber blanket, oh no.

Toss a towel over it first to soak up any water. Then sprinkle a bunch of cornstarch or baby powder all over the rubber to dry it out completely. Once it's not sticky anymore, you can wipe the powder off.

Oh that sliding off in a sheet is the worst feeling! Actually, a super cold cake is key, but the glaze temperature matters just as much. If the glaze is too warm when you pour it, it will melt the chilled surface and slide right off. Let it cool until it's just barely warm to the touch, like thick syrup.
