My sourdough starter finally stopped ruling my life
I used to be that person who fed my starter twice a day and planned my whole week around when it peaked. Last month I switched to keeping it in the fridge and feeding it once, only the night before I bake. Now I just pull it out Friday evening, feed it Saturday morning, and by Sunday I have bread with way better oven spring. It took me 2 years and about 12 ruined loaves to trust that cold starter works just as well. Anyone else stop babying their starter and get better results?

Fully agree, I did the SAME thing after a year of hovering over my jar like it was a newborn. Once I stopped feeding it twice a day and just let it chill in the fridge, my bread got BETTER and I actually enjoy baking again. Cold starter is honestly the best hack I ever figured out, and I wish someone had told me that two years ago.
