My wife told me my bread looked like a sad rock

She said the dense loaf I was so proud of would make a good doorstop, and that I should try using warm water instead of cold. I switched to 110 degree water for the yeast and the next loaf rose like a dream. Anyone have a good tip for getting a crisp crust without a Dutch oven?

Heard putting a pan of water on the rack below helps with crust. Steam is key.

Tried that once and ended up with soup instead of bread.

Soup problem usually means too much water, not too little. Nancy is right about steam helping with crust, but that pan of water trick works best if you put it in during the first 10 minutes, not the whole bake. Also if you are using a wet dough recipe, you might need to bake it longer at a lower temp to dry out the inside first. Next time try dropping your oven temp by 25 degrees and giving it an extra 15 minutes with the lid off.
