Vent: My sourdough starter is a diva but my backup plan is a rockstar

I tried to make my usual sourdough boule yesterday, but my starter, which I've had for 3 years, was just not bubbly enough. So I grabbed a packet of instant yeast from the back of my fridge as a backup. The sourdough loaf came out flat and dense, but the quick yeast bread I threw together in the same oven was perfect and fluffy. I guess sometimes the fancy, finicky method just loses to the cheap, reliable one. Anyone else have a 'fancy' baking method that just never works out for them?

Totally get it. My starter went on strike last winter. Switched to instant yeast for a basic sandwich loaf out of pure frustration. That thing rose like a CHAMP and was the softest bread I'd ever made. Sometimes you just need a win, and the fancy stuff can wait. My starter is still a moody pet, but that packet of yeast is my secret hero now.

That "need a win" feeling is everywhere, like when my old car starts and I just take the quiet drive instead of fixing the weird noise.
