A guy on a site in Boise told me my mortar was way too wet for the heat

He said 'it's gonna flash set before you can even butter the next brick' and he was right. Anyone got a good rule of thumb for adjusting water in different weather?

Flash set" is the key phrase there. That's more about heat sucking the moisture out too fast, not just the mix being wet. You adjust by keeping everything cool, not just cutting water. Use cool water, shade your materials, and work faster.

Yeah, and don't forget the mixer itself gets hot. A sun-baked drum will cook your batch before it even hits the forms.

Honestly, @reese86 nailed it. I just use ice water.
