Old brick walls in New Orleans made me miss simpler methods

Walking through the French Quarter, I saw brickwork from a century ago that still looks solid. It reminded me of my granddad's stories about taking time to do things right, not just fast. Anyone pick up tips or feel the same when they spot historic masonry on a trip?

My friend who restores old houses talked about lime mortar letting walls move without cracking. He said today's mixes are too hard and cause damage. That kind of know-how seems pretty rare now.
