A hostel manager in Lisbon insisted I should always book the third night free, but my friend says that locks you down too much.

Yeah, the "third night free" thing is a classic move. It reminds me of when my friend booked a hotel for a concert, and they had a "stay four nights, pay for three" deal hidden in the packages section. He only found it because he was clicking on every single rate option out of pure boredom while waiting for a pizza. Sometimes those deals are real, but man, you have to dig for them.

My buddy did the whole third night free thing in Barcelona and ended up stuck there an extra day because the bus strikes hit. He missed out on a 15 euro flight to Mallorca that popped up last minute.
