Watching a bakery in Austin throw out 30% of its bread each day made me rethink our whole inventory system.

Now I'm torn between sticking with our safe, bulk ordering that sometimes leads to waste or switching to a just-in-time model that could risk stockouts during busy periods, so what's the better call for a small service business?

Ever read that article about bakeries using apps to sell day-old stuff at a discount? Might be a middle ground, and I'm with @the_julia on this, waste just feels wrong. Could you test a smaller just-in-time order for, like, a week and see how it goes?

Actually, the bakery apps sell stuff from that same day, not day-old.

Honestly I was all about bulk ordering to save money. But seeing that waste happen changes things, maybe a small stockout is better than throwing good product away every single day.
