Had a customer in Austin ask me to cut a brisket 'against the grain' before I even trimmed it

This guy came into the shop last Tuesday and pointed at a whole packer. He said, 'I need you to slice that for me, but make sure you go against the grain.' I had to explain that you trim and cook the whole thing first, then slice it. He argued with me for five minutes, saying his YouTube video showed it differently. How do you even deal with that level of confidence mixed with being totally wrong? What's the weirdest cut request you've ever gotten?

Last month a guy at the farmers market asked me to butterfly a whole pork shoulder for him, like it was a chicken breast. He was so sure it would cook faster. I had to show him the bone structure and everything. The confidence people have after watching one short video is honestly amazing. I get wanting to learn, but maybe trust the person holding the knife?
