Hit 500 pounds of trim for sausage in a single week

Our shop in Springfield usually does maybe 200 pounds. Last week, a local diner's freezer went down and they sent us all their pork shoulders. Ended up with exactly 500 pounds of trim after breaking them down. My grinder was humming for two straight days. Anyone else ever get hit with a surprise mountain of work like that?

My buddy's deli got a whole truckload of pastrami briskets from a distributor's mistake once... they were corning beef for a month straight.

Funny you say that, @elliotr39, but that truckload might've been a curse in disguise. Your buddy's deli probably got stuck with a ton of meat they couldn't price right or sell fast enough, leaving them with a freezer full of pastrami for months. Most small shops can't afford to gamble on a surprise shipment like that, and it can actually hurt their cash flow.

Mistakes that turn into windfalls seem to be a hidden rule of the food business. Your buddy's deli story, @elliotr39, is a perfect example of that weird luck. I've seen a bakery get double the chocolate order and just make brownies for weeks. It's like the universe sometimes sends a free truckload to keep a place afloat. Those unplanned surplus items often become the special that everyone remembers.
