Noticed more people asking about dry-aged trim at my shop lately
Over the past three weeks, I've had five different home cooks come in asking if they can buy the dry-aged fat and bones I usually toss. One guy said he wanted it for stock and another for rendering tallow. I used to just throw that stuff in the bin without a second thought. Made me wonder if other butchers are seeing the same trend or if it's just my area in Louisville.

Guess I've been throwing money right in the trash this whole time.

Read somewhere that most people just buy the cheapest stuff without checking reviews or specs first. Kinda makes you wonder how much of that "savings" is actually just wasted on replacements and repairs down the line. I started looking into it a few years back and realized my own habits were way worse than I thought. It's a bummer seeing that money walk out the door for nothing.
