Old timer told me I was trimming too much fat, changed my whole cut
Guy from the abattoir in Des Moines watched me trim a brisket last Tuesday and said 'leave 1/4 inch, you're robbing the customer,' now I sell more weight and less scrap, anyone else get told their cuts are too lean?
