Spent $300 on a new boning knife and it completely changed my week

I finally upgraded my old, dull blade to a specific high-carbon model after a tough pork shoulder breakdown. The difference in clean cuts and speed was immediate, saving me at least an hour of work yesterday. What's the one tool purchase that actually saved you time and money?

I mean it's just a knife, not a magic wand. Good tools help but that's a lot of hype for a single hour saved. Sounds like you just needed a sharp blade to begin with.

My old $20 knife from the hardware store took me 45 minutes just to get through a beef brisket last month. After I finally dropped $180 on a decent German steel chef's knife, I did that same brisket in 15 minutes flat. The thing that really got me was how much easier it made clean-up because the cuts were so clean and nothing stuck to the blade. Saved me probably 2 hours a week once I added up all the time I was wasting fighting cheap steel.
