Walked into a butcher shop in Omaha and saw a whole pig hanging by the back door

Went to pick up some beef ribs for a family cookout and the owner just had this pig chilling there, no display case or anything, just hanging with a fan on it. Asked him about it and he said it was for a regular who orders it every month for a party. Do any of y'all do custom hanging orders like that or is that just a Midwest thing?
