Wasted $250 on a fancy boning knife that chipped on the second day
Bought this expensive German steel boning knife from a specialty shop in Portland, and it chipped bad on a pork shoulder after just two days of use. Has anyone else had luck with cheaper knives holding up better for heavy daily work?

...it's funny how that works, isn't it? I've noticed the same thing with a lot of stuff these days. Seems like the fancy brands are more about the look and the story than actually holding up to real use. My grandpa had this old Dexter-Russell that cost like thirty bucks and he used it every day for thirty years without a chip.

yeah but to be fair, Dexter-Russell isn't really a cheapo knife. it's more like a workhorse brand that's been around forever. I mean, thirty bucks back in your grandpa's day was actually decent money for a knife. they're not fancy looking but they're built tough for actual kitchen use. so it's not really the same as grabbing some no-name thirty dollar knife off Amazon today.
