Why does nobody talk about how much fat is actually in a chuck roll
I was breaking down a 90-pound chuck roll at the shop last Tuesday and decided to weigh the trim separately ended up with almost 22 pounds of fat and silver skin. That means nearly a quarter of what I paid for went straight into the trim bucket has anyone else ever actually weighed their yield on primal cuts like this?

yeah but did you weigh the fat that got left behind in the seams too or just the big chunks? cause i bet that number goes way higher when you account for all the little bits you can't really trim clean.

Right, like I'm supposed to pull out a jeweler's scale for the greasy smear left on the cutting board. Might as well weigh the napkins I wiped my hands on too, get the full calorie count for the whole kitchen. Next thing you know people are weighing the sweat that dripped off their forehead while they cooked.
