Why does nobody warn you about the health inspector who wants to watch you break down a whole pig
Had a guy from the county walk into my shop on a Tuesday morning in March and ask to see how I break down a whole hog. I've been cutting 22 years and never once had an inspector ask that, so I said sure, thinking he just wanted to check my grinder or my cooler temp. He stood there with a clipboard for 45 minutes while I worked, then said my band saw guard needed to come down 2 inches or I'd get written up, which nobody has ever mentioned in 5 prior inspections. Turns out he used to cut meat in Grand Rapids before he took the county job, and he said he only flags it when he actually sees someone using the saw the way it was meant to be used. Any of you had an inspector pull a surprise walkthrough like that, and did it cost you a fix you didn't expect?
