A butcher in New Orleans showed me a trick for trimming pork shoulder

I was down there for a food festival last month, and he said to always cut with the grain first, then turn it 90 degrees for the final trim. It makes the meat way less stringy when you pull it. Has anyone else tried this method on other cuts?

It's like that with a lot of things, the order you do them in changes the whole result.
