Bought a $120 Japanese mandoline for my new gig and it's already in the trash.

The blade guard was a joke and I took a chunk out of my thumb on the first onion. What's a safer brand you all actually trust for high volume?

Ouch, that's brutal. I read a kitchen safety thing that said the guard is non-negotiable with those things. For real volume, I've heard the stainless steel ones with the big hand guards are the only way to go.
