Bought a $40 digital probe thermometer and it saved my pork belly
I was doing a big batch for a catering job, and my old dial thermometer was all over the place. The new one gave me an exact temp in seconds, so I pulled the pork at the perfect 203F instead of guessing. It stopped me from serving dry, tough meat. My buddy's cheap mandoline nearly took his fingertip off, so he finally bought a decent one.

Remember even good mandolines can bite if you're not careful. The cheap ones often have flimsy guards that slip. A better model usually has a stable food holder, but you still must use it every single time. I learned that lesson with a nice Benriner, got distracted, and still have the scar.
