Can we talk about how a sheet pan of ice saved my hollandaise last service?
We had a huge wedding party order and my sauce started to break right as the first plates went out. I grabbed a half sheet pan from the freezer, set the bowl on it for maybe 90 seconds, and whisked like crazy. Do you have a better fix for a broken emulsion when you're in the weeds?

Tessa's buddy probably thought he was a kitchen wizard for saving that mayo. Next time my tire goes flat I'll just splash some cold water on it and see how that works out. Really gets the old mechanical stuff ticking again, you know?
