Frozen fish is trash, or so I said before I had to feed 200 with a broken cooler.

I always said only fresh fish was good enough for my kitchen. Then our main cooler failed during a packed dinner service. We had to thaw and use frozen cod we kept for emergencies. It cooked up flaky and moist, way better than I expected. Now I keep high quality frozen seafood on hand all the time. It has been a game changer for dealing with last minute rushes.

Totally get it. That emergency bag of frozen mussels saved me last week when friends dropped by. Just steamed them with some garlic and white wine, tossed in pasta. Couldn't tell the difference from fresh. My freezer is now stocked with those flat packs of salmon and peas for quick stir fries.

Funny how the best tricks get learned when your back is against the wall. Keeping a backup of the good frozen stuff is just smart, like having extra shingles on the truck for a surprise leak. Those IQF shrimp and some veggies in the deep freeze have saved more than one weeknight meal at my house. Lets you pull together something decent without a last-minute store run.

Yeah, saw a tip about vacuum sealing your own freezer packs. Like, cook a big batch of rice, portion it flat, and freeze. Reheats way better than store stuff. Lets you grab exactly what you need.
