Had a cook tell me kosher salt is better than sea salt for brining and I just don't buy it after testing both with a 5-pound chicken last Sunday.

The sea salt gave way more crisp skin and even seasoning throughout the meat, so has anyone else found a specific salt that actually outperforms in a wet brine or am I just crazy?

Sea salt gave way more crisp skin" - man, now you got me questioning EVERYTHING I thought I knew about brining. Guess the kosher salt folks are gonna have to step up their GAME or something.

Ha "step up their GAME" - that's rich coming from the sea salt crew. Guess I'll be digging my big box of kosher salt out of the trash where I threw it in shame. Now I gotta figure out if my chicken is secretly laughing at me for using the "wrong" salt. Next thing you know someone will say table salt works better and my head might actually explode. Whole kitchen's a conspiracy now. Salt is salt until someone with a blog decides it's not.
