My buddy was the worst for that, he'd be poking at a steak every 10 seconds. He finally listened to me and just left it alone one time, and he texted me a picture of the crust like he'd won the lottery lol. Said it was a total game changer and he felt silly for all the years of fussing.

Leave it alone until you see a golden crust forming. Why rush it when patience gives you that perfect sear? You'll never go back to constant flipping.

For thicker steaks, a single flip might not cook it evenly. I've found flipping every minute or so gives a better result without losing the sear!
