Just saw a kitchen go from a 3 to a 9 on health inspection scores in 90 days

I was doing some work on the hood vents at a local spot, and the first time I was in there, it was a mess. Grease everywhere, clutter, the whole deal. They got a surprise inspection and scored a 72. The owner freaked out and brought in a consultant. Now, three months later, I'm back for a filter change and the place is a different world. Everything is labeled, the walk-in is organized, and they have a color-coded cutting board system posted on the wall. They just got a 96 on their follow-up. Has anyone else seen a place turn around that fast, and what was the one thing that made the biggest difference?

Ever notice how a real shock can finally get people to do the simple stuff they already knew?

Wish more places had that kind of wake up call. I mean, sometimes it takes getting hit with a bad score to finally make the easy fixes. Good for them for actually following through.

mmm yeah idk, sometimes it feels like people just do the bare minimum to get their score up and then go right back to old habits. like fixing a few leaks ain't the same as actually changing your whole approach.
