My prep cook asked why I taste the same sauce 6 times, and his reason for asking made me change how I train new hires
He said nobody ever showed him what "done" tastes like, so he just guesses every time. Now I keep a labeled cup of the finished sauce on the line during service so anyone can compare against it, and our remake tickets at the grill station are down to about 2 a week. What do you all use to teach a new cook what a finished dish should taste like?
Keeps the heat on the sauce if it sits out during a whole shift though, so you might want to swap that cup every couple hours or toss it in the walk-in between rushes. The idea itself is solid, just saying that finished cup can drift on you after a while. We did the same thing with a labeled bowl of our braise and it worked great.
