Serious warning: I swear by canned tomatoes in cooked sauces

Last winter, our fresh tomato delivery failed right before a big event. We used canned tomatoes for the pasta sauce, and everyone loved it. I think fresh tomatoes are overrated for long cooked dishes. This saved us and tasted amazing. Don't dismiss it without trying.

For years I was that guy insisting on fresh romas for my Sunday gravy. Finally gave in last month and used canned san marzanos, and honestly can't tell the difference now.

Ha, I remember stubbornly peeling fresh tomatoes for hours before realizing canned ones work just fine.

When did you finally give in and try the canned ones? I was the same way with making my own pasta sauce until last year.
