Swapped my chef knife for a $12 veg peeler and never looked back
I used to think vegetable peeling was a job for a good knife, you know, just use the blade edge. Then about 3 years ago I watched this old French cook at a pop-up in Austin zip through a case of carrots with a cheap peeler. He told me 'the knife is for precision, the peeler is for speed' and it clicked. Now I keep a Kuhn Rikon peeler in my kit and I can prep a 5-pound bag of potatoes in under 8 minutes. It's not fancy but it saves my wrists during service. Anyone else find a tool they ignored for years that turned out to be a game changer?
