Switched from a standard mandoline to a Benriner for julienning veg

Used the standard one for years, but the Benriner's blade angle is way sharper. Got through 15 pounds of carrots for a slaw in half the time, and the cuts were cleaner. Anyone else have a specific tool that just works better for high-volume prep?

Ever try to julienne with a butter knife? Because that's what my old mandoline felt like.

What brand was that thing, so I know what to avoid forever? I had a cheap one that was basically a finger guillotine, it just crushed vegetables instead of slicing them. A dull mandoline is a special kind of kitchen nightmare. Did you finally get a better one, or did the experience just ruin them for you completely?
