The way people put away cutting boards at my last gig drove me insane

Kept finding them stored wet and stacked flat on each other, so every morning I'd have to pry apart boards with visible mold spots. Has anyone else dealt with a kitchen where basic drying habits just don't stick?

Play the opposite game here. Wet stacking traps moisture perfectly, makes the wood expand and seal in that antibacterial layer. You're overthinking the mold - it's just a little air-dry culture.

Mold is just extra flavor, right?
