The whole 'season as you go' thing vs. measuring everything out first

I used to be a strict mise en place guy, would measure every single spice into little bowls before I even turned on the burner. But last month during a crazy Saturday brunch service at this diner in Portland, I had to skip it and just season straight from the containers into the pan. Honestly, the food came out better and I saved like 20 minutes on cleanup. Which camp are you in, do you think measuring everything out is a waste of time or does it actually help you cook more precisely?

Trust me measuring everything out just makes your brain think everything needs to be exact when cooking is way more forgiving than people realize.
