Thought cheap knives were fine until I spent $150 on one good chef's knife
I was always the guy saying you don't need expensive gear, just skill. But after 6 months of using a single decent blade at work, my prep times dropped by half and my fingers stopped hurting. Anyone else have a tool that flipped their opinion once they actually tried the nice version?

Man, you just reminded me of the time I argued with a pastry chef that you can sharpen a dollar store pairing knife just as good as a Wusthof. That went about as well as you'd expect. She handed me her knife, I tried it, and my pride took a serious hit. Never said a word about cheap knives again but I did quietly save up for a good one. Now I get it, that first cut with a proper blade is like driving a car that actually turns when you move the wheel. Still hurts my wallet thinking about it though.

Oh man, that's the thing about experience right? You can talk all day but until you feel the difference yourself you just don't know. It's like that with a lot of stuff honestly. I used to think store brand ketchup was basically the same as Heinz until my buddy did a blind taste test on me and I couldn't even pretend anymore. Sometimes you just gotta humble yourself and admit the real deal actually matters even if it stings your wallet a bit.
