TIL I was overcooking my fish for almost 10 years
I had a customer send back a halibut last Tuesday saying it was dry. I was about to argue with him but tried a piece from the same fillet first. It was like eating a saltine cracker. I pulled my next order 3 minutes earlier and suddenly the texture was night and day. Has anyone else been cooking fish way longer than they needed to?

Right there with you. Used to cook salmon until it was totally opaque and flaking apart, then tried pulling it off the heat while it was still a tiny bit translucent in the center. Completely different fish.

Wait @robin_wright, you pull it while it's still a little raw in the middle? That sounds scary but I gotta try it now.
