Unpopular opinion: Mise en place is way overrated for weeknight dinner rushes
I get it for plating fine dining, but at my place in Portland we tried skipping the prep bowls and just went straight from the walk-in during a 60 cover Saturday. Saved like 20 minutes of cleanup and nobody died lol. Anyone else ditch the little bowls when things get crazy?

Honestly my kitchen in PDX does the same thing every Friday rush.
