Vent: my first head chef said never salt pasta water, and I blindly did it for 2 years
He claimed the sauce does all the work, so I stopped seasoning the water at my first gig in Portland and nobody said a word for months. Then a stage at a spot in Seattle tasted my cacio e pepe and asked who taught me to cook, because the noodles had zero flavor inside, so who else got burned by a chef's bad habit they passed down like gospel?

sauce does all the work" is wild, my old chef swore the opposite and undercooked every batch.
