I kept eating roujiamo with a fork for two years until a guy in Xi'an laughed at me
I spent two years in Xi'an reheating my roujiamo in the microwave and eating it with a fork because the juice went everywhere. Then last month a vendor at the Muslim Quarter watched me do it, laughed, and said the point is to eat it hot with your hands while standing outside. I tried it his way at his stall on Beiyuanmen street, 8 yuan, and the bread was crisp on the outside and the meat juice soaked right in instead of turning it to mush. Has anyone else had a food in China they were eating completely the wrong way?
